Dough Batch
Your next dough batch.
Scale bread and pizza dough by total weight or portions, account for your starter, and check ingredients as you weigh. One purchase, offline, no ads, accounts, subscriptions or in-app purchases.
Set up your batch
- Choose Portions and enter a count and weight per portion, or choose Total weight. All weights are in grams.
- Tap Edit recipe. Water, salt, dry yeast and oil are percentages of total flour, including flour already in your starter.
- If using a flour-and-water starter, enter its weight as a percentage of total flour and its hydration (water divided by flour × 100). For example, 100% hydration means equal weights of flour and water. Starter amount is not the percentage of prefermented flour.
- Save to keep the formula in your recipe library. Cancel leaves your previous formula unchanged.
Weigh into the bowl
Use the ingredient list for weighing. It already subtracts flour and water supplied by the starter. Tap each ingredient to mark it weighed. Expand Flour and water breakdown to see the totals and starter contributions. Do not add those breakdown totals again.
Your current batch and checkmarks remain when you close the app. Changing quantities or the formula clears the checklist. Weigh again clears the marks; Share batch opens the system share sheet with calculated quantities. Recipes can be edited, duplicated or deleted from the library.
Example
For 1,000 g of dough at 70% hydration, 2% salt, 20% starter and 100% starter hydration: add 523.3 g flour, 348.8 g water, 116.3 g starter and 11.6 g salt. Displayed amounts are rounded; tiny positive amounts appear with a less-than sign. Dough Batch calculates quantities, not fermentation times or baking instructions.
Local data and recovery
Recipes and the current batch are saved on your device. If stored data cannot be read, the app preserves it and asks before starting a new collection. Recovery saves a separate local copy of the unreadable data. Deleting the app removes its local data; device backups depend on your Apple settings.

Wähle Portionen mit Anzahl und Gewicht pro Portion oder das gesamte Teiggewicht. Alle Mengen sind in Gramm. Unter Rezept bearbeiten gibst du Bäckerprozente bezogen auf die gesamte Mehlmenge ein, einschließlich des Mehls im Starter.
Startermenge bedeutet Startergewicht als Prozent der gesamten Mehlmenge, nicht Anteil vorfermentierten Mehls. Starterhydration ist Wasser geteilt durch Mehl × 100: 100% bedeutet gleich viel Mehl und Wasser. Die Zutatenliste berücksichtigt diese Anteile bereits. Verwende zum Abwiegen nur diese Liste; addiere die Werte der Mehl-Wasser-Übersicht nicht nochmals.
Hake Zutaten beim Abwiegen ab. Die aktuelle Menge und Häkchen bleiben beim Schließen erhalten. Änderungen an Menge oder Rezeptur setzen die Liste zurück. Erneut abwiegen entfernt die Häkchen. Rezepte lassen sich speichern, bearbeiten, duplizieren und löschen. Über Teigmenge teilen kannst du die berechneten Mengen als Text weitergeben.
Beispiel für 1.000 g Teig mit 70% Wasser, 2% Salz, 20% Starter und 100% Starterhydration: 523,3 g Mehl, 348,8 g Wasser, 116,3 g Starter und 11,6 g Salz zugeben. Angezeigte Mengen sind gerundet. Sehr kleine positive Mengen erscheinen mit einem Kleiner-als-Zeichen. Gärzeiten und Backanleitungen sind nicht enthalten.
Rezepte und Teigmenge bleiben lokal. Bei unlesbaren Daten fragt die App vor einem Neustart der Sammlung und bewahrt eine lokale Sicherung der alten Daten auf. Das Löschen der App entfernt ihre lokalen Daten. Fragen: rr@ressl.ch.
